Eating to balance Kapha

In Ayurveda, Kapha is the dosha of earth and water. It is heavy, slow, cool, oily and stable, which is why a Kapha imbalance often shows up as sluggishness, weight gain, congestion, water retention and a foggy, low mood.

To lighten Kapha, you do the opposite of its qualities. Favour foods that are light, warm, dry and well spiced, leaning into the pungent, bitter and astringent tastes. Think plenty of vegetables and legumes, lighter grains like millet and quinoa, and warming spices such as ginger, black pepper, turmeric and a little cayenne. Go easy on heavy, oily, sweet, salty and cold foods, and keep oil to a minimum.

1. Energizing Leafy Greens and Chickpeas

Light, spiced and full of energy. Bitter greens and protein-rich chickpeas are ideal for lifting Kapha heaviness, with just a little oil.

Serves 2 to 3

Ingredients

  • 1 tsp olive oil or ghee (just a little)
  • 1 tsp cumin seeds
  • 1 tbsp grated ginger
  • 2 garlic cloves, minced
  • 1/2 tsp ground turmeric
  • 1/4 tsp black pepper
  • 1 can chickpeas, drained (or 1.5 cups cooked)
  • 4 big handfuls of kale or spinach, chopped
  • Juice of 1/2 lemon
  • Salt to taste

Method

  1. Warm the oil in a pan. Add the cumin seeds and let them sizzle.
  2. Add the ginger and garlic and cook for 1 minute.
  3. Stir in the turmeric, black pepper and chickpeas. Cook for 3 to 4 minutes.
  4. Add the greens and a splash of water, and cook until just wilted.
  5. Finish with lemon juice and salt.

2. Invigorating Ginger Detox Tea

A warming, stimulating tea that gets things moving and clears Kapha sluggishness. This is the classic Ayurvedic CCF blend with extra ginger.

Serves 2

Ingredients

  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 1/2 tsp fennel seeds
  • 1 tbsp fresh sliced ginger
  • 2 cups water
  • Squeeze of lemon
  • 1/2 tsp raw honey (added once warm, not boiling)

Method

  1. Lightly crush the cumin, coriander and fennel seeds.
  2. Add to a pot with the ginger and water. Bring to a boil.
  3. Simmer for 5 to 7 minutes, then strain.
  4. Add a squeeze of lemon, and stir in honey once the tea has cooled to drinkable. Sip through the morning.

3. Light Spiced Millet Bowl

Millet is a light, drying grain that suits Kapha far better than heavier rice or wheat. Tempered with warming spices and greens, it is satisfying without weighing you down.

Serves 2

Ingredients

  • 3/4 cup millet, rinsed
  • 2 cups water
  • 1 tsp ghee or olive oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp grated ginger
  • 1/2 tsp turmeric
  • 1 cup chopped broccoli and peas
  • A few curry leaves (optional)
  • Juice of 1/2 lemon, salt to taste

Method

  1. Simmer the millet in the water for 18 to 20 minutes until fluffy, then set aside.
  2. Warm the ghee in a pan. Add the mustard and cumin seeds and let them pop.
  3. Add the ginger, turmeric, curry leaves and vegetables. Cook for a few minutes until tender-crisp.
  4. Fold in the millet, lemon and salt, and warm through.

4. Lightening Spiced Vegetable and Lentil Soup

Serves 4

Ingredients

  • 1 tsp olive oil
  • 1 tbsp grated ginger
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/4 tsp black pepper
  • Pinch of cayenne
  • 3/4 cup red lentils, rinsed
  • 3 cups chopped vegetables (cabbage, carrot, celery)
  • 5 cups vegetable stock
  • Salt and lemon to finish

Method

  1. Warm the oil in a large pot. Soften the ginger and garlic for 1 minute.
  2. Stir in the cumin, turmeric, black pepper and cayenne.
  3. Add the lentils, vegetables and stock. Bring to a boil.
  4. Simmer for 25 minutes until the lentils are soft and the soup is brothy.
  5. Season with salt and a squeeze of lemon.

5. Energizing Roasted Masala Chickpeas

Serves 4 as a snack

Ingredients

  • 1 can chickpeas, drained and patted very dry
  • 1 tsp olive oil (light coating)
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/4 tsp black pepper
  • Pinch of cayenne
  • 1/2 tsp salt

Method

  1. Heat the oven to 200C / 400F.
  2. Toss the dry chickpeas with the oil and all the spices.
  3. Spread on a lined tray in a single layer.
  4. Roast for 25 to 30 minutes, shaking halfway, until crisp and golden. Cool to crisp up further.

6. Warming Spiced Baked Apples with Ginger

Serves 2

Ingredients

  • 2 apples, cored
  • 1/2 tsp grated fresh ginger
  • 1/2 tsp cinnamon
  • 1 clove per apple
  • Pinch of cardamom
  • 1 tsp honey or maple syrup (a little)
  • 1 tbsp water

Method

  1. Heat the oven to 180C / 350F.
  2. Mix the ginger, cinnamon, cardamom and honey, and spoon into the cored apples. Push a clove into each.
  3. Stand the apples in a small dish with the water.
  4. Bake for 25 to 30 minutes until soft. Serve warm, remove the cloves first.
